Oatmeal Pumpkin Muffins

  • 1 mixing bowl
  • 1 mixer
  • 1 spatula
  • 1 muffin tin

Ingredients
  

  • 1/2 cup Brown Sugar
  • 1/2 cup Plain Yogurt
  • 1/2 cup Unsweetened Applesauce
  • 1/4 cup Butter, melted
  • 3 Eggs
  • 1 cup Pumpkin Puree
  • 2 Ripe Bananas, mashed
  • 1 cup Quick Oats
  • 2 cups All-Purpose Flour
  • 1 tsp Salt
  • 2 tsp Baking Soda
  • 2 tsp Cinnamon

Instructions
 

  • Preheat oven to 350 °F.
  • Grease muffins tins.
  • Cream together brown sugar, yogurt, applesauce, and butter.
  • Add eggs, pumpkin, and mashed bananas. Mix well.
  • Add all dry ingredients and slowly blend in until it's all incorporated.
  • Scoop into muffin tins, filling them 3/4 full, and bake for 20-22 minutes. Check with a butter knife to make sure the middles are cooked.
  • Cool for about 20 minutes and enjoy!
