Tips for Making the Best Coffee Cake Recipe:
Make sure to pre-heat your cast iron skillet, I really like this 10 inch cast iron skillet because it is the perfect size for this coffee cake and makes such a fluffy cake. You can use a larger pan size or cast iron, or even a stainless steel skillet to make this recipe, but it won’t be as fluffy.
After the butter melts in your pre-heated skillet, swirl the butter all around for best results. Make sure to have a good oven mitt on for this as to not burn your hand (ask me how I know! haha).
After you have heated your butter, swirl the butter the pan to coat it. Then pour your batter into the skillet.
You will have the butter settle on the edges of the batter. This is where the baster comes in handy! Use it to spread that melted butter over the top of the batter before sprinkling cinnamon and sugar all over the top. This make the cinnamon sugar melt into the batter.
Ingredients You’ll Need:
- Butter: I used unsalted butter for this recipe
- Flour: I used all purpose flour for this recipe but you can use whole wheat flour or even cake flour
- White Sugar: You can use brown sugar or substitute with 1/2 maple syrup
- Cinnamon: I think think this is the star of the show. Adds so much warmth to this recipe
- Baking Powder
- Vanilla Extract
- Salt
- Milk: I used raw milk from a local farm, but you can use what you have on hand.

How to Make this Easy Coffee Cake Recipe:
Preheat oven to 400 degrees f oven.
Add cold butter to skillet and put in oven to melt while you mix the other ingredients.
Mix 2 cups flour, 2/3 cup sugar, 2 teaspoons cinnamon, 1/2 teaspoon salt, and 1 tablespoon baking powder in a large mixing bowl. Add 1.5 cup of milk in slowly and mix into the dry ingredients. This will make a thick batter. You can mix by hand or use a hand mixer on low speed for this.
Pull skillet with melted butter from the oven. Swirl the butter around the pan and pour the cake batter into the prepared pan.
The melted butter will gather around the edges. Take a basting brush and spread the butter over the top of the batter.
Once the butter is spread over the top of the batter, sprinkle the teaspoon of sugar and the teaspoon of cinnamon over the top of the cake batter in an even layer.
Pop back into the oven for a bake time of 20-25 minutes. You want the edges to start turning brown. Check the center of the cake with a cake tester to make sure it is done. Pull out from oven and ket it cool for 5-10 minutes.
While it’s cooling, add room temperature butter, powdered sugar and vanilla extract to a medium bowl. Start by adding 1 tablespoon of HOT water at a time to the mixture. Do not use more than 3 tablespoons total of water. Mix well.
Once the coffee cake has cooled some, pour the icing over the cinnamon sugar layer. It will form into a nice glaze over the top.
Serve and enjoy with a warm cup of coffee!
FAQ’s :
How do I store leftover coffee cake?
Let the coffee cake cool completely and store in an airtight container for up to 5 days. To reheat, warm in oven at 350 degrees for 15-20 minutes. If you plan on eating it within a day, you can place aluminum foil over the top of the pan to keep fresh.
Can I make a cinnamon streusel for the topping instead of the glaze?
Yes, that would be great! You can mix together flour with cinnamon, sugar, a little milk. Pour flour mixture over the top of the coffee cake before baking to make a crunchy streusel topping or crumb topping.
