Cinnamon Roll Skillet Coffee Cake
This Cinnamon Roll Skillet Coffee Cake is such an easy breakfast to throw together! It is perfect to have for a slow Saturday morning for breakfast or brunch. The glazed topping really makes it taste just like a cinnamon roll, without all the effort of making cinnamon rolls! It is perfect with its warm cinnamon flavor to enjoy with a hot cup of coffee.
A great part about this breakfast is that it comes together really fast, and is made with simple ingredients. You do not have to have any fancy ingredients on hand to have this ready within 30 minutes!
It is a great recipe to make when friends or family come for brunch. This coffee cake along with some fruit and, of course, coffee, you will have a lovely meal to serve your guests.
My children love waking up to me making this recipe because they always think I am making cinnamon rolls! But it much faster than cinnamon rolls, so that is a big plus for them… eating faster!
Tips on Making a Cinnamon Roll Skillet Cake:
Make sure to pre-heat your cast iron skillet, I really like this 10 inch cast iron skillet because it is the perfect size for this coffee cake. You can use a larger cast iron, or even a stainless steel skillet to make this recipe, but it won’t be quite as fluffy.
After the butter melts in your pre-heated skillet, swirl the butter all around. Make sure to have a good oven mitt on for this to not burn your hand (ask me how I know! haha).
After you swirl the butter, pour your batter in and you will have the butter settle on the edges of the batter. This is where the baster comes in handy! Use it to spread that melted butter over the top before sprinkling cinnamon and sugar all over the top. This make the cinnamon sugar melt into the batter. So good!
Ingredients:
- Butter: I used unsalted butter for this recipe.
- Flour: I used all purpose flour for this recipe
- Sugar: I am sure you could substitute with 1/2 maple syrup if you wanted
- Cinnamon: I think think this is the star of the show. Added so much warmth.
- Baking Powder
- Salt
- Milk: I used raw milk from a local farm, but you can use what you have on hand.
How to Make Cinnamon Roll Skillet Coffee Cake:
Preheat oven tp 400 degrees.
Add butter to skillet and put in oven to melt while you mix other ingredients.
Mix flour, sugar, cinnamon, salt, and baking powder in a large bowl. Add milk in slowly and mix it all together.
Pull skillet with melted butter from the oven, and pour in the batter. The melted butter will gather around the edges. Take a baster and spread the butter over the top of the batter.
Once the butter is spread over the top of the batter, sprinkle the teaspoon of sugar and the teaspoon of cinnamon over the top of the batter.
Pop back into the oven for 20-25 minutes. You want the edges to start turning brown. Check the middle to make sure it is done.
While it’s cooling, add butter, powdered sugar and vanilla to a bowl. Start by adding 1 tablespoon of HOT water at a time to the mixture. Do not use more than 3 tablespoons total of water. Mix well.
Once the coffee cake has cooled some, pour the icing over it. It will form into a nice glaze over the top.
Serve and enjoy with a warm cup of coffee!

- 1.5 cups milk
Cinnamon Sugar Topping
- 1 tbsp sugar
- 1 tbsp cinnamon
Icing
- 2 tbsp butter
- 1 cup powdered sugar
- 1/2 tsp vanilla
- 2-3 tbsp hot water
